Here at Chefs Plate, we take food waste seriously – and that means making the absolute most use of your ingredients too! We’ve got an easy tip for making sure you are getting the most juice out of your citrus fruits! Not only do citrus juices add such a great zing of flavour to anything you cook but the versatility of these citrus gems mean they can also be added in any dish.
1) Warm your lemons (or any citrus you’re using) up to room temperature. This step is only applicable if you had kept your lemons in the fridge previously. You can even pop yours in the microwave for ~15 seconds to get even more juice. Be sure not to heat it for too long as you may end up boiling the juice.
2) Before cutting into the lemon, apply a small amount of pressure with the palm of your hand while rolling the fruit across your counter. Rolling the the citrus fruit while applying pressure helps to break down the cell walls which then releases more juices.
3) Cut the lemon in half and hold half the lemon in your hand with the fleshy part facing your palm. Squeeze away! Having the flesh face your palm means you’ll be able to catch all the pesky lemon seeds from falling into your food! Repeat with the second half if you need more lemon juice.
