What was your favourite meal as a kid?
My favourite food as a kid was a good hamburger – and it still is. My family would throw backyard BBQ’s and I distinctly remember my mother bringing home fresh Kaiser buns from the local bakery and making her own patties with fresh ground beef. It’s been my favourite food ever since. A soft bun, a salty and juicy flat top griddle-cooked hamburger, a thin disk of sweet onion and oozing cheddar cheese. Simple and delicious. That, my friends, is a perfect burger. And when it’s good, it’s life-changing.
Which food trend are you currently obsess with?
New products and dishes made up of only plant-based foods continue to surprise me. It’s not only about bland, rubbery ‘tofurky’ anymore. There is an increasing demand for high quality, great tasting alternative plant-based proteins and it is dominating the food scene in 2018. I recently tried a plant-based beef substitute that was so delicious and even simulated the juice that would normally drip out of red meat (using beet juice). It’ll be really interesting to see chefs get creative with alt-meats and plant-based dishes.
What’s the best part about your job?
Simply put, the best part about my job is knowing that it helps people feed themselves. Whether it saves a family precious time from the hassle of grocery shopping or whether it sparks the creative foodie at home to try something new, it’s pretty rewarding to know that doing what I love eases some stress in people’s day-to-day lives. I also love that it allows me draw on my own experiences as a chef and as an eater to produce flavorful recipes our customers will enjoy.
