At Chefs Plate we encourage our home chefs to get out of their comfort zones and to try new, fun ingredients you can’t get at your local supermarket. We want you to learn various cooking techniques, and to try different ingredients. It’s exciting to be able to introduce new produce to our customers that they’ve never tasted or cooked with before, like Sea Asparagus.
Chances are you’ve seen Sea Asparagus before at the farmer’s market or on a menu but brushed right passed it. While you might think it looks similar to seaweed or cactus, Sea Asparagus is actually a vegetable that grows in salt water. They are delicate, green succulents harvested by hand and should be eaten within a week of being picked for optimal freshness.
Their official name is Salicornia, but also commonly referred to as sea beans, pickleweed, and glasswort. In Canada, we see a bountiful amount along the East and West coasts, typically growing in salty marshes, shorelines, and crevices.
Sea asparagus elevates any dish with its crisp texture, natural salty flavour, and its burst of colour. Not only are they a delicious but they are also healthy, full of vitamins A, C, B2, B9, and B12 as well as iron, potassium, and anti-oxidants. They especially brighten up salads with their crunch and brininess. Sea asparagus is so plumped with salt water, it’s best to blanch them first prior to adding them to your dish.
