Ingredients
  • 2 1/2cups all-purpose flour
  • 1tsp baking powder
  • 1tsp baking soda
  • 1/2tsp nutmeg
  • 1/2tsp salt
  • 1 1/2tsp vanilla extract
  • 1cup brown sugar
  • 1/3 cup granulated sugar
  • 1cup buttersoftened
  • 2cups mini Cadbury Mini Eggs®
Instructions
  1. Preheat oven to 350 degrees F. In a mixing bowl, whisk together the flour, baking soda, baking powder, nutmeg, and salt. Set aside. In another large mixing bowl, use an electric mixer to cream together the butter, brown sugar, and granulated sugar.
  2. Once the butter and sugar is creamed, add the eggs one at a time, and beat until incorporated. Add the vanilla and blend until mixed. Add the flour, ½ cup at a time, to the butter mixture.
  3. Fold in the mini Cadbury Mini Eggs®. Line a baking sheet with parchment paper. Take about 2 tablespoons of the cookie dough and use your hands to roll it into a ball. Place the ball on the cookie sheet and press it down to flatten slightly. Place the cookies about 2 inches apart on the baking sheet since they will spread slightly.
  4. Bake the cookies in the preheated oven for 12-15 minutes, or until they start to brown. Remove from the oven and cool on a wire rack. Repeat this process until all the dough is used.
