Beets are the beautiful ruby vegetables in the root family. While they are available year round, beet seasons in Ontario typically run through the summer and into the early fall.
Typically a beautiful reddish-purple hue, beets also come in varieties that feature white, golden/yellow or even rainbow colour roots. On our menu next week we feature gorgeous candy cane beets, the sweeter version of its ruby red cousin. Try it out in our Crispy Chicken Summer Crunch Salad!
Peas are an ancient ingredient and have been growing for thousands of year. They are surprisingly not big fans of hot weather and are best grown in the early spring and summer (aka. NOW!) or restarted in late summer to grow into the fall. Try them out in next week’s dish where we pair peas with Miso Tofu Shirataki Noodles!
In the same family as broccoli and kale, gai lan is the older, wiser sibling. Packed with just as many nutrients, gai lan is the underrated super food. Its dark green leaves and crisp stalks hold the nutrients that protect against cancer, have cardiovascular benefits, asthma relief, and are known to improve eye health.
Next week, we create a delicious new way for you to enjoy gai lan – with Korean-style Short Ribs and Yams – the gai lan adds a hearty and healthy element to this satisfying dish.
Zucchini may be at the end of the alphabet, but it’s at the front of our minds now that summer is here! Our favourite summer squash is now in season and available at the peak of freshness. Zucchini is undoubtedly the most prevalent and plentiful of all summer squash! From grilling to spiralizing to making zucchini bread, you can never run out ways to cook zucchini. Zucchini also boasts a rich nutritional profile, and offers many health benefits thanks to its phytonutrients, mineral and vitamin content.
Next week, we take our zucchini game to the next level by making them into fritters with the help of a grater! Just another way you can take advantage of the plentiful zucchini in the summer!
