Here at Chef’s Plate, we love corn in the summer. Grilled in its husk, sweet corn is a divine lunch or mouth-watering side dish with a barbecue dinner. BUT, we also love summer corn in the winter. From corn meal to corn tortillas, we’ve got tons of fun and unique ways to include corn in a variety of dishes. Here’s how you can enjoy corn in winter meals – without the barbecue!
Once you’ve had hominy, you’re not likely to forget it! These big kernels of corn are puffy and chewy with a very unique flavour owing to a special processing technique. Hominy is made from whole corn kernels that have been soaked in a lye or lime solution to soften the tough outer hulls. The kernels are then washed to remove the excess solution, the hull, and often the germ. These little nubs are delicious and addictively chewy.
Ahh, corn tortillas – where do we begin? They’re chewy, savoury, and crispy-edged in all the best possible ways and they’re a warm hug for your favorite taco fillings. Corn tortillas are made by mixing Masa Harina with water to create a pliable, firm and delicious canvas. Corn tortillas are also more versatile – they can be used for soft tacos when they’re fresh, but are also fantastic fried to a crisp and used for hardshell tacos, taquitos, or corn chips.They will turn a typical Taco Tuesday into the Best. Dinner. Ever.
Corn kernels need no introduction! Likely the most typical version of corn, corn kernels are bright, sweet pops of flavour to any meal. Boiled or grilled, we dare you to try to find someone who doesn’t enjoy corn in it’s purest form.

Cornmeal is made by grinding dried corn kernels into one of three textures: fine, medium, and coarse. The traditional way of making cornmeal was through stone-grinding, which retains some of the hull and germ of the kernels. This makes the cornmeal more nutritious but also more perishable because of the higher fat content. The more modern way of grinding corn is through steel rollers, which remove most of the husk and germ.
