We’re thrilled to give you another Chef’s Plate Spotlight, this time on Carla Castro, one of our talented chefs helping Jason Rosso to create new recipes! Hailing from Brazil, Carla left a flourishing career as a chemical engineer to follow her love of food.
Her Journey to Chef’s Plate
Following her Bachelor degree, Carla worked in many multi-national corporations as a project manager. When it came around applying for her Master’s, Carla started volunteering at a soup kitchen while she waited for her applications to go through. It was there that she endured hard work, standing and processing pounds and pounds of vegetables and she vividly remembers the huge blisters that formed under her forefinger after a day of chopping tons of carrots. Despite being tired, she would leave the kitchen feeling happier than she had ever been at any job. From there, she took a job at a small fine-dining restaurant in New York where her fate was sealed – she had no doubts that she had found her calling!
Carla received her culinary training at the Culinary Management program at Niagara College. She spent a year apprenticing and traveling abroad, where she got to meet cooks from all over the world and fine-tune her culinary skills before moving back to Canada. Her culinary experience is vast, including Canadian cuisine and cooking both head-to-tail and farm-to-table styles.
After returning to Canada, Carla noticed a new trend of customers buying food online. She saw that there was a shift in people’s purchasing patterns and wanted to get involved in this new process. That’s when she found Chef’s Plate and she couldn’t believe her luck. A position where she could use her knowledge as a project manager, help develop recipes from different cultures and travel without having to move? It sounded too good to be true!
What Does Carla Do for Our Lovely Customers:
Alongside Jason Rosso, Carla plays a huge role here at Chef’s Plate. Not only is she the one we go to when our lovely customers share their thoughts on our dishes or upcoming recipe ideas but she is also the one who is in constant contact with our local suppliers. Along with her passion and love for the food industry, Carla does all this with the goal of creating recipes that meet our customers preferences while using fresh and seasonal ingredients!
On why she loves cooking
“I have always been drawn to travelling. I love to get to know new cultures and learn new languages. Food is such a huge part of culture and it became clear to me that understanding the cuisine was an integral part of living the culture.
For me, that’s where inspiration comes from. I know I won’t be able to visit all corners of the world, but maybe if I learn to cook a regional specialty, or I get to try a local ingredient, I can get a taste of the place without having to travel there!”
On her top tips for new cooks at home
- Don’t be afraid to try new things, be it a product or a technique. There are too many great foods out there to get stuck eating the same thing every week!
- A hint of zing will lighten up your taste buds. A squeeze of lemon, a drop of vinegar or wine added at the last moment can help highlight all the dish’s flavours.
- Season as you go – if you add a touch of salt at every step, the final result will shine; you need much less to make an impact then if you try to season only at the end.
